Sesame Candy Bar

  • 6 oz Sesame seeds
  • 3 Tbsp honey
  • 200 g White sugar
  • 3 Tbsp water
  • 1/4 tsp salt
  • 1 Tbsp vanilla extract
  • 3 oz chopped nuts (optional, for added crunch)

Instructions:

  1. Toast the Sesame Seeds:
    • In a dry skillet over medium heat, toast the sesame seeds until they are golden brown. Stir frequently to prevent burning. Once toasted, set aside.
  2. Prepare the Pan:
    • Line a baking pan with parchment paper, leaving some overhang on the sides for easy removal.
  3. Make the Syrup:
    • In a medium saucepan, combine honey, sugar, water, and salt over medium heat. Stir until the sugar dissolves.
  4. Cook the Syrup:
    • Bring the mixture to a boil, then reduce the heat to medium-low. Continue to simmer, stirring occasionally, until the mixture reaches the hard-ball stage (about 250°F/121°C on a candy thermometer).
  5. Add Sesame Seeds and Nuts:
    • Stir in the toasted sesame seeds and chopped nuts (if using). Mix well to ensure even distribution.
  6. Add Vanilla Extract:
    • Remove the saucepan from heat and stir in the vanilla extract.
  7. Pour into the Pan:
    • Quickly pour the hot mixture into the prepared baking pan. Use a spatula or spoon to spread it evenly.
  8. Cool and Cut:
    • Allow the mixture to cool and set at room temperature for a few hours or refrigerate for faster setting. Once set, use the parchment paper overhang to lift the candy out of the pan. Place it on a cutting board and cut into bars or squares.
  9. Serve:
    • Your sesame candy bars are ready to be enjoyed! Store them in an airtight container at room temperature.
